Thick Bamboo is the stalk of the Bamboo Tree, and serves as one of the defining features of the Bamboo Grove. Though Thick Bamboo can be used in lieu of regular Sticks in any crafting recipe, its distinctive appearance is telling of its unique building possibilities.

Thick Bamboo is peculiar in that it can be used to create either Bamboo Planks or Bamboo Walls, depending on the orientation of the crafting recipe. For reference to the image, Bamboo Planks is shown on the left side, while Bamboo Walls is shown on the right. Bamboo Planks is what you would use to make all the building variations of Thick Bamboo, which all have the same crafting recipes as with regular types of wood.
Another thing that may become obvious is that Thick Bamboo acts very similarly to fences: if you place one down that's only one block tall, you cannot jump over it. This can make for an appealing natural barrier, as another option to what is in vanilla Minecraft.
